4th of July Ice Cream Cookie Sandwiches


Fourth of July is less than a week away!  If you are planning a party or gathering to celebrate the holiday, or simply want an excuse to make a sweet treat, check out this simple tutorial on making an ice cream cookie sandwich (red, white, and blue style!)


Supplies:

Chips Ahoy Cookies (American Summer/American Idol edition)
Vanilla Ice Cream
Red or Blue Sprinkles
Saran Wrap


1. Flip one cookie over and take a small scoop of ice cream and place it on top of the upside down cookie (you might need to use your fingers to mold the ice cream and place it neatly on top of the cookie).

2.  Take a 2nd cookie and place it on top of the ice cream, making a sandwich.  Squeeze it slightly so the ice cream slowly fills up the inside and reaches the edges of each cookie.  If needed, use a butter knife to smooth out the edges.

3.  Take saran wrap and wrap the ice cream cookie sandwich tightly so that the cookies and ice cream can stick together nicely.  (Don't make it too tight that you squeeze the ice cream out of the edges!)  Stick it in the freezer for a little bit to let the ice cream harden a little and mold to the cookies.

4.  Once the ice cream cookie sandwich is molded together, take it out of the freezer to decorate with sprinkles.  (I left my cookie sandwiches in the freezer overnight and the ice cream was way too hard so I left it out on the counter for a few seconds to soften to make sure sprinkles can stick onto it.)  Roll into a bowl of sprinkles until the ice cream is nicely covered.

Happy Father's Day


Happy Father's Day to all of the dads out there!

I want to show my love and appreciation to my dad, Ismael, aka Mike, for being such a hard-working dad and bringing us to America to make our dreams come true!  I know it was a tough road, but now look at how much the Lord has blessed us and how our family has grown!

Thank you to my father-in-law Waldemar, aka Val, for being such a positive role model to my hubby.  Chris is an amazing dad and I know it's because of the example you set as he was growing up and the example you continue to set as you play with your grandchildren.

And I especially want to wish my husband a Happy Father's Day!  Chris, I can't thank you enough for being the most wonderful father to Brody and Skylar.  Whether you are doing simple tasks like playing catch in the yard, or cutting up and preparing the kids' food the way they like, or coaching soccer, or taking time off work for family vacations, and the list goes on and on.  You always go above and beyond and I am forever grateful!

Free Printable - 4th of July Ideas


4th of July is only a few weeks away!  Last year I created patriotic 2-Inch Party Tags for the 4th of July holiday and showed you a tutorial on creating little snack bags.  Remember this snack bag post?

I wanted to share other simple ideas, like the treat toppers I created by gluing the tags on lollipop sticks and sticking them into jello (above photo).  I usually stick these into cupcakes, but you can see that you can use them to top other treats!


And you can also make little candy cups by gluing the tags to ribbon and attaching to cups.  Those are just a couple simple ideas.  Download the tags here and have fun with your creations!

Brody's Last Day of Kindergarten


I cannot believe that today is Brody's last day of Kindergarten!  I am a bit overwhelmed.  Don't get me wrong, I am so happy that summer break is upon us.  No more having to set the alarm to wake up,  lunches to pack, hours of doing homework, and forcing Brody to go to bed early.  I am excited for what lies ahead this summer.

But I am emotional to think that my sweet little Brody has just finished his Kindergarten year and it reminds me how quickly he is growing up before my eyes.  He has learned so much this year!  He has read over 100 books and after looking through his journal it amazes me how much his handwriting has improved.  He has taught me some interesting things about Math and Science that either I've forgotten, or never even learned.  He has also been quite the speller.  The other day I told Chris that we should take the kids out F-I-S-H-I-N-G as a surprise and Brody responded with, "Yes, I want to go fishing!"  


He has made great friends and such wonderful memories.  I am so grateful to his awesome kindergarten teachers and for everything they taught him.  What a great year!  

Brody, we are so proud of you and love you so much!  Here's to a great summer break!
